Canadian Bacon

You guys! Apparently I make charcuterie now. And not just ANY charcuterie, but mapley, mustardy cured pork that’s rolled in cornmeal- aka Canadian Peameal Bacon.

It’s insanely delicious and I wrote a bit about it on Substack a couple weeks back, and a little more (aka a recipe for it) on Substack today.
